Mini eggs add crunch and a deliciously chocolatey flavor for these soft and chewy cookies. A perfect easy to make treat for Easter.


Unsalted butter Brown sugar Vanilla essence Egg Bicarbonate soda Flour Salt Mini eggs


1. Mix room-temperature unsalted butter in a bowl for one minute.

2. Add brown sugar and whisk until paler in color.

3. Add one egg and vanilla essence. Whisk until just combined.

4. Add the mixed dry ingredients and some frozen chopped mini eggs.

5. Mix gently until combined.

6. Spatula is a great tool to use for mixing. 

7. Roll into balls. Place on baking tray and bake for 12-15 minutes.

8. Press the remaining chopped mini eggs into each cookie and let them cool completely.

Perfect with milk or hot chocolate. Enjoy!
