SHAKSHUKA

1. Add a splash of vegetable or sunflower oil to a pan. Heat the oil for a few minutes.

2. Add chopped onions to the hot oil and stir.

3. Add chopped garlic cloves to the pan and stir. Cook onions and garlic for a few minutes

4. Add chopped red capsicum peppers to the pan and stir.

5. Add the seasoning to the pan and cook it for 1 minute. This will cook out the spices.

6. Add tomato puree or paste to the pan, stir and cook on medium heat for 1 minute.

7. Continue to stir all of the ingredients together.

8. Pour tomatoes into the pan.

9. Stir the tomato mixture well.

10. Bring tomato mixture to a boil and stir.

11. Season the tomato sauce with salt and pepper to taste. Continue to simmer the tomato sauce for 10 minutes.

12. Crack an egg into a bowl. Then use a spoon to create a well in the tomato sauce and the egg into the well.

13. Repeat the previous step with the remaining 4 eggs and finish off by adding one egg to the centre.

14. Continue to cook the shakshuka on low to medium heat.

15. Once the eggs have set the shakshuka is ready!

16. Add chopped parsley for a fresh herby flavor.

17. The shakshuka is done.

18. Plate up and serve shakshuka with crusty bread or any other dish of your choice.
