MAROCCAN TOMATO COUSCOUS
Couscous is semolina wheat or barley. There is fine, medium and large pearl pasta.
Couscous is called "smida" in Morocco.

Couscous
Canned tomatoes
Onions (optional)
Tomato puree
Seasoning
Water
Butter
Parsley

INSTRUCTIONS
1. Heat a splash of sunflower or vegetable oil in a medium-sized pot.
2. Once the oil is hot pour one can of tomatoes into the pot.
3. Add in salt, pepper, maroccan spice mix, oregano, marjoram and tomato puree.
4. Add 2-3 cups of water or chicken/vegetable stock to the pot and bring to a boil.
5. Add the couscous and leave to cook for 7 minutes. Some chopped onions can also be added.
6. Once the couscous has softened add some butter and use a fork to stir lightly.
7. Garnish with some parsley.
