SALMON TACOS

INGREDIENTS – ½ A whole salmon fillet – 1 Lime – 3 tbsp of ancho and chipotle powder – 2 tsp of paprika – ½ tsp of garlic powder – ¼ tsp of marjoram – Salt to taste – A pinch of black pepper – 10-12 Tortillas – Sour cream

1. Preheat the oven at 225C/450F. Then, add seasoning and lime juice to a bowl.

2. Stir the mixture to make a paste.

3. Rub the chili paste into the salmon.

4. Cook the salmon in the oven for 10-15 minutes.

5. As the salmon cooks, chop the chili.

6. Chop the avocado into cubes.

7. Dice red onions for salsa.

8. De-seed and dice the red capsicum pepper.

9. Dice the mango for the salsa.

10. Season the salsa.

11. Assemble the tacos.

12. Serve with sour cream and cilantro.
