Line a baking tray with baking paper. Use unsalted butter to lightly grease the baking paper and set aside.
Add butter and brown sugar to a large pan. Leave the butter to melt and stir in the sugar until it dissolves.
Remove the pan from heat and add 1/4 of melted white chocolate, oats, cinnamon, salt and mix well. Add the mixture to a greased baking tray and set aside.
Heat the strawberries in a small saucepan on a low/medium heat. Once the strawberries begin to breakdown and form a sauce remove from the heat. Then pour the strawberry sauce on top of the oat mix.
Drizzle the remaining white chocolate on top and freeze for 2 hours.
Once the oats have set, use a knife to slice it into equal chunks.
