  • 250 g of minced beef
  • ½ chopped onion
  • 1 crushed garlic clove
  • 2-3 Tbsp of tomato puree
  • A drop of lemon juice
  • 5-7 sweet potatoes
  • ¼ - ½ cup frozen sweetcorn
  • 1 avocado
  • 1-2 tbsp of sour cream
  • Salt to taste
  • Pepper to taste
  • A splash of sunflower oil
  • grated cheddar optional

  • Heat up some sunflower oil (or a healthy oil of your choice) in a pan. Add ½ chopped onion and 1 crushed garlic clove to the heated oil and cook them until they are soft and golden-brown.
  • Then, add 250g of minced beef with salt and pepper and cook until the beef is browned. Add 1-2 Tbsp of tomato puree to the cooked beef and stir. Sweeten with a drop of lemon juice, salt to taste, pepper to taste and a pinch of oregano. Cook on low heat for about 10-12 minutes. You can also add any other seasoning of your choice.
  • Boil 5-7 sweet potatoes for 8-10 minutes or until soft and cooked through. Pat dry and set aside.
  • Mash one whole avocado and season with salt and pepper (or make your guac however you like it!).
  • Cut the sweet potatoes in half and stuff them with minced beef sauce. Top with the guac and sour cream, and enjoy!
