Microwave Jacket Potato and Minced Beef Recipe

This is our take on the classic microwave jacket potato and minced beef recipe. The combination of sweet and savoury flavours will soon become one of your favourites.

  • 250 g of minced beef
  • ½ chopped onion
  • 1 crushed garlic clove
  • 2-5 tbsp of tomato puree
  • 1-2 tsp of vinegar
  • 5 potatoes
  • Salt to taste
  • Pepper to taste
  • Hard cheese optional
  • A splash of sunflower oil


  • Heat up some sunflower oil (or a healthy oil of your choice) in a pan. Add ½ chopped onion and 1 crushed garlic clove to the heated oil and simmer them until they are soft and golden-brown. Then, add 250g of minced beef with salt and pepper and cook until the beef is browned.
  • Add 2-5 Tbsp of tomato puree to the cooked beef and stir. Add 1-2 tsp of vinegar and stir. Cook on low heat for about 15 minutes.
  • Meanwhile, wash 5 potatoes, add them to a large bowl and microwave for 7-8 minutes (or use the inbuilt microwave setting used to cook potatoes).
  • Once the potatoes are cooked slice them through the centre, add a pinch of salt, pepper and a knob of butter (optional).
  • Once the minced beef sauce is cooked stuff the microwave jacket potatoes with the sauce and top with grated cheese (optional).
