Heat up some sunflower oil (or a healthy oil of your choice) in a pan. Add ½ chopped onion and 1 crushed garlic clove to the heated oil and simmer them until they are soft and golden-brown. Then, add 250g of minced beef with salt and pepper and cook until the beef is browned.
Add 2-5 Tbsp of tomato puree to the cooked beef and stir. Add 1-2 tsp of vinegar and stir. Cook on low heat for about 15 minutes.
Meanwhile, wash 5 potatoes, add them to a large bowl and microwave for 7-8 minutes (or use the inbuilt microwave setting used to cook potatoes).
Once the potatoes are cooked slice them through the centre, add a pinch of salt, pepper and a knob of butter (optional).
Once the minced beef sauce is cooked stuff the microwave jacket potatoes with the sauce and top with grated cheese (optional).
