  • baking tray
  • brush for basting

  • 8-10 chicken drumsticks
  • 1/3 cup of soy sauce
  • 1/2 cup of honey
  • 2 tsp of chopped ginger
  • 2 tbsp of apple cider vinegar/rice wine vinegar
  • Salt and pepper
  • Vegetable/Sunflower oil
  • Sesame seeds optional
  • Spring onions or herbs optional

  • Grab a medium sized bowl. Add 1/3 cup of soy sauce, 1/2 a cup of honey, 2 tbsp of vegetable oil, 2 tablespoons of apple cider vinegar, 2-3 crushed cloves of garlic, 2 tsp of chopped fresh ginger, salt to taste, pepper to taste and stir well. Option: to adjust seasoning to your taste at this stage. Reserve about half of the marinade to baste the chicken later on while it bakes in the oven.
  • Pour the marinade on to the drumsticks and mix everything together well. Then, cover the drumsticks and leave them to marinate in the fridge for a minimum of 1 hour. For more flavour marinate for 24 hours.
  • Preheat the oven to 200°C/400°F/Gas 6. Once the chicken drumsticks have finished marinating add them to a lightly greased oven tray and bake for 30 minutes. You will need to turn and baste the drumsticks every 10 minutes to get a delicious flavour and colour.
  • Once the chicken is done garnish with sesame seeds, herbs (or spring onions) and serve!
