Preheat the oven at 230°C/Fan 210°C/Gas8. Grab an oven tray and lightly grease it with oil. Set aside for later
Rub 1 tablespoon of butter and a splash of oil into the beef. Then, season with cumin, honey, thyme, salt, pepper and rub the seasoning into the meat (if you wish to add any other spices do so now). Tuck the garlic cloves and onions into the beef, place the beef in the oven tray and then put it in the oven to roast for 20 minutes. After 20 minutes lower the heat to 160°C/Fan 140°C/Gas3. For rare beef roast for 5 minutes per 100g, for medium beef roast for 7 minutes per 100g and for well-done beef roast for 9 minutes per 100g. Once the beef is ready remove it from the oven and leave it to rest for 15 minutes.
Wash and chop the ends off each asparagus. Heat a splash of oil in a pan. Add asparagus to the pan and season with salt and pepper to taste. Cook for 5-7 minutes.
Serve together as shown!
Notes
Marinate: If you have extra time, marinate the brisket and refrigerate for 1-2 hours. This will make the beef extra tender and intensify its flavors.
Asparagus: If you dislike asparagus, substitute it with Brussels sprouts or broccoli.
Thyme: You can replace thyme with rosemary.
Oven: Ensure the oven is preheated for at least ten minutes before cooking the meat. This helps it cook evenly and within the given time.
