Preheat your oven to 200 degrees Celsius (or 180C fan/Gas 6). While the oven is heating, season chicken fillets with salt, pepper, and any other herbs to taste.
Place chicken in the oven and bake for 15-20 minutes or until it is cooked through. Meanwhile, give sweet potatoes a good wash and add them to the oven, baking them for 10-12 minutes.
Remove the chicken from the oven and shred it with a fork. Add the shredded chicken to a large bowl with sweetcorn, mayonnaise, and salt and pepper to taste. Then, mash a whole avocado and mix it with a pinch of salt and pepper until you have a smooth guacamole.
Notes
Chicken: If you're using frozen chicken, thaw it completely in the fridge overnight before cooking.
Sweet Potatoes: This recipe calls for roasting them, but you can also air fry or boil them.
Batches: Feel free to double or triple the recipe to feed more people.
