Instructions
Begin by washing and peeling the potatoes. Chop them into equal-sized chunks to ensure even cooking.
Place the chunks in a pot and cover them with cold water. Bring the water to a boil and cook the potatoes for 15-17 minutes, or until they are soft. Then, drain the excess water.
Add salt, pepper, garlic powder, and cornflour to the drained potatoes. Mash the mixture until it is soft and smooth, ensuring all ingredients are well combined.
Scoop 1-2 tablespoons of the mashed potato mixture into your palm and flatten it. Place a portion of cheese in the center, then carefully seal it into a ball, making sure the cheese is fully enclosed. Gently press to slightly flatten the ball, then use a star-shaped cookie cutter to create a festive star form.
Coat the stars first in egg wash and then in panko breadcrumbs. Set them aside and repeat the process with the remaining potato mixture.
