Heat oil in a pan over medium heat. Add onions and cook for 1-2 minutes or until fragrant. Then add ground beef and season salt, pepper, cumin, and thyme. Stir well.
Next, add chopped potatoes to the pan and mix with the beef and continue to cook the mixture until the beef is browned and the potatoes are tender.
Once done, remove the pan from the heat and allow the filling to cool down completely.
Next, take a sheet of pastry and place a portion of the cooled minced beef filling on it. Fold the pastry over the filling to form the samosa, ensuring the edges are sealed using the cornflour mixture. Do not overfill the pastry sheets.
Then, heat oil in a saucepan or deep fryer over medium heat. Place the samosas in the hot oil and fry for 3-5 minutes on each side, or until golden brown.
Use a slotted spoon to remove the samosas from the oil and place them on a paper towel to absorb any excess oil.
Finally, serve these crispy beef samosas with tomato relish or green chutney.
Notes
Cornflour: Combine 1 tablespoon of cornflour with 1 tablespoon of water. This mixture will help seal the samosas.
Pastry: Ensure the pastry is sealed properly to prevent the filling from spilling out during frying. In addition, do not overfill the pastry as it will split while frying.
Make-ahead: You can make the samosa filling and fill the pastries beforehand. Cover them with a plastic wrap and fry them once you are ready to serve.
