Coat 4 chicken fillets (we prefer chicken breast as it’s the leanest part of the chicken) with sunflower oil, juice from ½ a lemon, and salt and pepper to taste. Add whatever other seasonings you typically like on your chicken and let it marinate.
Fire up the stove and grill your chicken fillets on each side until they are cooked all the way through – and really make sure they are cooked all around!
Meanwhile, take your 2 sweet gem lettuce leaves and coat it with olive oil. Season with salt and pepper. Grill them on each side until they are lightly charred.
Grab a great big salad bowl and add 4 handfuls of mixed leaves, 2 cups of sweetcorn, 3 handfuls of chopped baby tomatoes, 2 peeled carrots, and balsamic vinegar. Add your chicken and lettuce, and drizzle a little bit more olive oil on top.
