Heat up minced beef sauce and set aside see notes for recipe.
If you have precooked plain white rice squeeze in lemon to taste, add some chopped coriander, salt and pepper to taste and stir. Alternatively, you can cook the rice from scratch and add these ingredients as the rice cooks.
Peel avocado, add a few drops of olive oil, salt and pepper to taste. Then use a fork to mash until smooth and set aside. Heat up beans and set aside.
Warm the tortilla wraps in the microwave for 30 seconds.
Grab 1 tortilla wrap and add the minced meat sauce, then add beans, 1-3 tablespoon of rice, ¼ handful of chopped tomatoes, ¼ handful of greens, ½ a handful of grated cheese, 1-2 tablespoon of guacamole, 1 tablespoon of Greek yoghurt, tuck in the sides and wrap it up! Repeat steps for the second wrap.
Notes
To make a minced beef sauce:
Heat up some sunflower oil (or a healthy oil of your choice) in a pan. Add ½ chopped onion and 1 crushed garlic clove to the heated oil and cook them until they are soft and golden-brown. Then, add 250g of minced beef with salt and pepper and cook until the beef is browned.
Add 1-2 tablespoon of tomato puree to the cooked beef and stir. Sweeten with a drop of lemon juice, salt to taste, pepper to taste and a pinch of oregano. Cook on low heat for about 10-12 minutes. You can also add any other seasoning of your choice.
