Cut up chicken fillets and garnish it with the oil of your choice, plus a dash of lemon juice, salt, pepper, and whatever other seasonings you want (we love cumin and cayenne pepper for this dish).
Pan fry the chicken in a heated pan for 10-12 minutes. Make sure it is cooked all the way through.
In a separate saucepan, add 1 cup of quinoa with 1 ½ cups of water (or 2 cups of quinoa with 3 cups of water). Bring it to a boil, and then let it simmer for 10 minutes. If you purchased quinoa in a specific package, make sure to follow the instructions on your packaging instead.
In the pan where you fried the chicken, add more oil, and reheat it. Then, add a handful of kale and cook for a few minutes. Then add ½ can of black beans, ½ cup of sweetcorn, ¼ of an onion, and 1 chopped red bell pepper. Cook for 5 more minutes.
Combine ingredients, garnish with chili flakes, parsley, or whatever else suits your fancy, and enjoy!

Optional: Leave ingredients to cool before mixing them together.
