These Lemon Puff Pastry Stars are a zesty, festive treat. They require less than five ingredients and take less than 20 minutes to make. Serve them during Christmas and other special occasions.
Preheat the oven to 400°F/200°C/Gas 6 and line a baking tray with baking paper.
Unroll the ready-made puff pastry and use a star-shaped cookie cutter to cut out stars. Gently press a smaller star-shaped cutter into the center of each star.
Baste the pastries with egg wash and bake for 15 minutes or until golden. While the pastries are baking, heat lemon curd on low in a small pot for about 5 minutes to loosen its consistency.
When the stars are ready, use a fork to press into the center and remove the excess pastry. Carefully fill the centers with lemon curd using a piping bag.
Dust the lemon puff pastry stars with icing sugar and serve.
