Chop the beef against the grain into bite-sized pieces. In a bowl, mix beef, cornflour, soy sauce, ½ tablespoon of chicken bouillon, and ½ tablespoon of black pepper. Cover the bowl with plastic wrap and let the beef marinate while you prepare the sauce.
For the sauce, combine dark soy sauce, rice wine vinegar, brown sugar, white pepper, cornstarch, chicken bouillon, and sesame oil in another bowl. Stir until well combined.
Next, bring water to a boil in a pot and add the noodles. Cook them for 5-7 minutes or until done, then drain the water. If you’re using fresh noodles, rub them on a chopping board to separate them.
While the noodles cook, heat sesame oil in a wok pan. Add the marinated beef and cook on both sides for 5-7 minutes or until fully done. Then add sliced onions, minced garlic, ginger and green onions to the wok, cooking for an additional two minutes.
Add the cooked noodles to the wok with the beef and veggies. Pour the prepared soy sauce mixture over them and stir everything together on medium to high heat until well combined. Finally, add pak choi to the wok and cook on low heat for about five minutes until tender.
