Delicious Almond Double Chocolate Chip Cookies are made with coconut flour, unrefined cocoa powder, chocolate chips, and almond flakes. Serve as a snack
Preheat the oven to 190°C. Add unsalted butter and caster sugar to a bowl and whisk until it becomes pale in colour.
Add egg white, vanilla extract and whisk until smooth.
Add plain flour, unsweetened cocoa powder, coconut flour, baking soda, a pinch of salt, almond flakes, chocolate chips and use a large spoon or spatula to mix everything together.
Cover an oven tray with grease proof paper and use a tablespoon (or ice cream scoop) to add the cookie dough to the tray. Make sure you leave spaces in between each cookie.
Bake in oven for 8-9 minutes and leave to cool for a few minutes. Then transfer to a wire rack and leave to cool for ten minutes.
