This is the Best Spicy Mac and Cheese with Jalapeños bursting with rich flavors of cheese, garlic, fresh parsley and mustard. Made with homemade cheesy sauce, this pasta is a gentle twist on the classic and is a total comfort meal that brings joy!
Grab a large saucepan. Add unsalted butter and melt on low heat. Then add flour to the saucepan and stir on medium heat for 30 seconds.
Remove the saucepan from the heat and add ¼ of the milk and stir. Continue to add the milk gradually until the mixture is smooth. Put the saucepan back on the stove and pour the heavy cream into a saucepan. Then bring the mixture to a boil.
Meanwhile, bring salted water to a boil and cook elbow macaroni for 8-10 minutes.
Season the sauce with salt to taste, paprika, white pepper, cayenne pepper, garlic seasoning, onion powder, mustard, oregano and stir. Taste and adjust the seasoning to suit your taste. Cook on medium/low heat for 10 minutes and stir from time to time.
After 10 minutes remove the sauce from the heat, add ¾ cup of cheddar, 2 cups of mozzarella, ¾ cup of red Leicester cheese, jalapeños and stir.
Pour the cheesy macaroni mixture into a heatproof baking dish. Then top the mac with the remaining cheese and bake for 20 minutes or until golden.

Notes
Stir: When making cheese sauce, make sure to stir continuously or else the sauce may stick to the bottom of the pan. It gets thicker very quickly.
Make ahead: If you want to make this pasta ahead of time, boil the pasta and keep it separated from the cheese sauce. Heat the sauce and mix the pasta before baking.
Breadcrumbs: If you’re a fan of crunchy mac n’ cheese, don’t forget to add some breadcrumbs on top of it and bake it for 10 minutes at 180 degrees Celsius.
