Preheat the oven to 1190C/380F. Then, line a baking tray with parchment paper and add the cashews. Once the oven is hot, add cashew nuts and roast them for about 10 minutes. After they are toasted, remove them and let them cool completely before adding them to a food processor.
Blend the cashews in the processor for 10-15 minutes, scraping down the sides every 5 minutes. Once the cashews are smooth, stop blending. If you want to add some sweetener, add it after blending for 8 minutes.
Once smooth, add the cashew butter to a jar.
Enjoy as a spread, a dessert topping, or even a sweet addition to your favorite breakfast!
Notes
Sweetener: Add 1-2 teaspoon of honey, agave, syrup or sugar for a sweeter cashew butter.
Serve: Spread on toast or add to stews, smoothies and porridge.
