- Cashew: If you are using raw cashews, roast them, but if you are using roasted cashews, blend them straight away. Do not use salted cashews.
- Sweetener: You can use honey, agave or maple syrup to sweeten the nut butter to your taste.

- Pulsing: Blend the cashews in a food processor, stopping every five minutes to scrape down the sides to ensure they are all blended smoothly.
- Time: Be patient while blending. It does take a while before the cashew butter becomes smooth.

- Cashew: Let the cashews cool entirely before adding them to the food processor.
How to Make Creamy Cashew Butter
1. Preheat the oven to 190C/380F. Line a baking tray with parchment paper. Add the cashews to the tray. Once the oven is hot, roast them for about 10 minutes. After toasting them, remove them from the oven and let them cool completely before adding them to a food processor.
2. Blend the cashews in the processor for 10-15 minutes. Stop blending every 5 minutes to scrape down the sides. Add the sweetener once they’ve been blending for about 8 minutes.
3. Once smooth, add the cashew butter to a jar.
