Then, slice the sides and the top of the potatoes. The potato should resemble a large block. Next, slice the potato into equal-sized 1 centimeter or 0.4 inch blocks.
Then, place chopsticks vertically along one block and slice thinly horizontally across the potato, then flip it over and chop diagonally. This should give you an accordion shape. Pat the potatoes dry with a paper towel then season with salt and pepper to taste.
Next, heat oil in a saucepan or deep fryer on medium heat. Cook on both sides for 3-5 minutes or until golden brown. Once fried, remove the potatoes from the oil and place them on a paper towel-lined plate. This will help soak up any excess oil.
Serve your crispy accordion potatoes with your favorite dipping sauce and a sprinkle of fresh parsley on top.
