This is the perfect Easy Plantain Frittata for everyone to enjoy. It includes bell peppers, onions, plantain, and eggs and is ready in 20 minutes. Serve it for breakfast or brunch.
Preheat oven to 200C/400F. Heat a splash of oil in a pan. Then add chopped plantain and fry on each side for 2-3 minutes or until golden brown. Leave plantain to drain on a paper towel and set aside.
Crack eggs into a medium-sized bowl. Add salt to taste, pepper to taste, garlic powder and a pinch of thyme. Whisk the eggs together well.
Add red onions, tomatoes, and mixed bell peppers and mix again.
Pour the egg mixture into a cast iron pan or baking dish. Add the fried plantain to the egg mixture.
Bake for 12-15 minutes or until done. Serve with avocado slices.
Notes
Batch: Feel free to half, double or triple the ingredients in this recipe to feed more or less people.
Stove-top: It can also be cooked on low to medium heat for 15-20 minutes on the stovetop.
