This is a fun breakfast recipe for plantain lovers. It is super easy to make and filled with delicious flavors. All you need is a few simple ingredients and you’ll be enjoying this frittata in no time!
What is a Frittata?
Frittata is an egg-based Italian dish similar to an omelet. It normally includes meats, cheeses and vegetables. Frittatas are a great leftover meal.
The Easy Plantain Frittata Recipe
- Heat a splash of oil in a pan. Then add chopped plantain and fry on each side for 2-3 minutes or until golden brown. Leave plantain to drain on a paper towel and set aside.
- Crack open eight eggs into a medium-sized bowl. Add salt to taste, pepper to taste, ¼ tsp of garlic powder, and a pinch of thyme. Whisk the eggs together well.
- Add ½ a chopped red onion, 1 chopped tomato, and mix again.
- Pour the egg mixture into a cast iron pan or baking dish. Add the fried plantain and mixed bell peppers to the egg mixture (decorate as desired).
- Bake for 12-15 minutes or until done. Serve with avocado slices.
Alternatives
Frittatas can also be made on the stove. However, on this occasion, I baked the frittata because I wanted a healthier alternative.

- 1 Avocado optional
- A splash of vegetable oil
