How to Make Easy Plantain Frittata
- Preheat oven to 200C/400F. Start by adding a splash of oil to a saucepan. Then, add chopped plantain to the pan. Cook on both sides for 2-3 minutes. Remove the plantain from the pan and set aside.
2. Next, crack eggs into a bowl, season, add peppers, tomatoes, and onions, and mix well. Add a splash of oil to the pan and pour the egg mix into it. Then add the plantain slices.

Ingredients
- 2 plantain chopped
- 8 eggs
- ½ a red onion chopped
- 1 tomato chopped
- Salt to taste
- Pepper to taste
- ¼ teaspoon of garlic powder
- A pinch of thyme
- 1 Avocado optional
- A splash of vegetable oil
Instructions
- Preheat oven to 200C/400F. Heat a splash of oil in a pan. Then add chopped plantain and fry on each side for 2-3 minutes or until golden brown. Leave plantain to drain on a paper towel and set aside.
- Crack eggs into a medium-sized bowl. Add salt to taste, pepper to taste, garlic powder and a pinch of thyme. Whisk the eggs together well.
- Add red onions, tomatoes, and mixed bell peppers and mix again.
- Pour the egg mixture into a cast iron pan or baking dish. Add the fried plantain to the egg mixture.
- Bake for 12-15 minutes or until done. Serve with avocado slices.
