Make this wonderful melt-in-your-mouth Easy Puff Pastry Apple Pie with simple ingredients. The puff pastry has a beautiful buttery texture that works perfectly with the caramelized apple filling. Serve plain, with a scoop of ice cream or whipped cream.
Preheat oven to 400F/200C. Melt butter in a saucepan, then add flour. Stir vigorously until combined. Then pour in water and stir again. Add sugar to the saucepan and stir until it dissolves. Once the butter mixture is done, set aside.
Apple Pie Filling
Then, peel an apple and slice it into four. Remove the core and thinly slice the apples. Repeat this step with all of the apples and add them to a bowl. Squeeze lemon juice on top of the apples to prevent them from changing color.
Next, add the nutmeg, cinnamon, salt and ginger to the sliced apples. Toss them with the spices until well combined, pour the butter mixture on top and stir until all of the apple slices are coated. Set aside.
Puff Pastry Top
Remove the puff pastry from the packaging and cut it to fit the shape of your pie dish. Then bake the puff pastry for 2-3 minutes to prevent sogginess at the bottom of the pie. Remove the pastry from the oven and add the apple filling. Do not add any remaining liquid as this will result in a watery filling.
To make the lattice top, cut the puff pastry into equal-sized strips as shown. Place the strips on top of the pie leaving a bit of space between each strip. Then, pull back each alternate strip and place another strip vertically across the pie. Then, fold the alternate strips back over the pie and place another strip across vertically. Repeat these steps alternating between folded and unfolded to make the lattice top.
Bake Pie
Pinch the sides of the pie to give it a beautiful crinkled affect. Then, make egg wash by combining 1 tablespoon of water and one egg. Whisk until well combined then brush the mixture on top of the puff pastry lattice top. Sprinkle sugar on top of the puff pastry and bake for 75 minutes.
Check the pie from time to time and if the top gets too brown then cover it with foil as it bakes. Once it is done, let it rest for at least 1 hour. Serve this gorgeous Apple Pie with ice cream, a dollop of whipped cream or custard!
Notes
Apple sizes: Cut the apples thinly so that they bake quickly. If the apples are thicker, they will bake for longer in the oven.
Apple type: For this recipe, I use granny smith apples but you can mix them with sweet apples or use sweet apples instead. It all boils down to your preference.
Drain apples: Make sure you drain the apples when adding them to the pastry. Do not add the remaining juices as it will make the filling watery.
Filling: If you prefer a softer filling, cook the apples on the stove for about 7-10 minutes before combining them with the butter mixture and adding them to the pie.
