These healthy wholemeal chicken tacos are just what you need to celebrate taco Tuesday the healthy way! Make your own whole meal tacos in under 10 minutes!
Add 2 cups of wholemeal flour with a pinch of salt and about 3 tablespoon of olive oil to a large mixing bowl. Mix it together until it is combined. Slowly add ⅔ cup of boiling water to the mix, stirring as you add it in. Once it’s all mixed together, roll it into a ball shape.
Knead this ball of flour on a table for a few minutes. Put it aside in a room-temperature space and let it sit for 30 minutes. Afterward, cut it into 8 equal pieces and flatten them with a rolling pin.
Heat up some oil in a frying pan and fry each piece of batter for 2-3 minutes per side. Remove them from the pan and set them aside.
In the same pan, add 2 chopped chicken fillets, ½ teaspoon of cumin, a pinch of paprika, some lemon juice, and ½ teaspoon of curry powder to the pan. Cook for 10 minutes.
Add ingredients to the fried tortillas, top with guacamole and sour cream, and enjoy!
