This Leftover Puff Pastry Turkey Pie is creamy, delicious, and filled with flavor! It includes vegetables, onions, and a creamy sauce. Serve for dinner.

Instructions
Preheat oven at 200C/400F/ Gas 6. Heat unsalted butter in a pan, add diced onions, season with salt to taste, pepper to taste, thyme and stir. Then, add flour and stir for one minute.
Pour milk and chicken stock into the pan and stir. Bring the mixture to a boil and then, cook on low heat for 2-3 minutes.
Remove the mixture from the heat and add mixed vegetables and leftover turkey and stir.
Grab the puff pastry sheet and cut it into equal-sized squares.
Pour the mixture into a dish and cover it with the pastry squares. Brush the pie with egg wash and bake for 30 -40 minutes or until the pie is golden.
Notes
Turkey: Feel free to use any other leftover meats you have for this recipe such as, duck, chicken, lamb or beef.
Add-ins: You can add mushrooms and potatoes if desired.
Toppings: If you’re out of puff pastry, use mashed potatoes and shredded cheese to top the turkey filling instead.
