- Butter: I used unsalted butter, but you can also use salted butter. If you use salted butter, be mindful of how much salt you add to the filling.
- Milk: Dairy milk, but you can use low-fat milk if you prefer a healthier option.
- Flour: Use all-purpose or plain flour for this recipe.

How to Make Leftover Puff Pastry Turkey Pie
- Preheat oven at 200C/400F/ Gas 6. Add butter to a pan.
2. Melt the butter on a low to medium heat.
3. Add onions, season with salt to taste, pepper to taste, thyme and stir.
4. Next, add flour to the pan and stir on medium heat for one minute.
5. Pour milk and chicken broth into the pan and stir.
6. Bring the mixture to a boil.
7. Then, add leftover turkey and vegetables to the sauce.
8. Stir the turkey pie filling well.
9. As the filling cools, prepare the pastry. Line a deep oven dish with puff pastry, and then pour the filling into it.
10. Cover the filling with more puff pastry and baste with egg wash. Bake for 30-40 minutes or until done.

- ½ diced onions

- ¼ cup of flour
- ¾ cup of milk
- ½ cup of chicken stock
- 1 ½ half cup of mixed vegetables
- 3 cups of leftover turkey
- 2 puff pastry sheets
- 1 egg wash 1 tablespoon of water and 1 egg whisked together to brush pie
Instructions
- Preheat oven at 200C/400F/ Gas 6. Heat unsalted butter in a pan, add diced onions, season with salt to taste, pepper to taste, thyme and stir. Then, add flour and stir for one minute.
- Pour milk and chicken stock into the pan and stir. Bring the mixture to a boil and then, cook on low heat for 2-3 minutes.
- Remove the mixture from the heat and add mixed vegetables and leftover turkey and stir.
- Line the oven dish with the puff pastry. Pour the mixture into a dish and cover it with more pastry. Brush the pie with egg wash and bake for 30 -40 minutes or until the pie is golden.
Notes
- Turkey: Feel free to use any other leftover meats you have for this recipe such as, duck, chicken, lamb or beef.
- Add-ins: You can add mushrooms and potatoes if desired.
- Toppings: If you’re out of puff pastry, use mashed potatoes and shredded cheese to top the turkey filling instead.
