Heat a splash of sunflower oil in a pan. Add onion and crushed garlic clove to the heated oil and simmer until soft and golden-brown. Then, add minced beef with salt and pepper and cook until the beef is browned.
Add tomato puree to the cooked beef and stir. Add vinegar and stir. Cook on low heat for about 15 minutes.
Meanwhile, wash potatoes, add them to a large bowl and microwave for 7-8 minutes (or use the built-in microwave setting used to cook potatoes).
Once the potatoes are cooked, slice them through the center, add a pinch of salt, pepper and a knob of butter.
Once the minced beef sauce is cooked, stuff the microwave jacket potatoes with the sauce and top with grated cheese.
Notes
Potato: Instead of microwaving, you can boil the potatoes. Put them in a pot of water, add salt and pepper, and bring to a boil. Cook for 12-15 minutes or until they're done. Drain the water and serve with your choice of filling.
Filling: You can fill these potatoes with shredded chicken, or tuna and sweetcorn.
Minced Beef: Adjust the seasoning to your taste. Add more or less pepper as you prefer.
