A Meal in One
Do you ever feel so hungry that you could eat both the meal and the bowl it’s in? Well, with this recipe, you can certainly do that! And don’t worry, you won’t be chewing on plastic; in this meal, the potato is the bowl! This means that you can eat all of the piping hot minced beef inside and enjoy the tender spiced potato all at the same time.
A Great Side
Although it’s stuffed with meat, it can still act as a decent side instead of your main dish. This jacket potato stuffed with minced beef sauce pairs well with big green salads, veggie stir fry, or even another protein-based dish. It’s all up to you!
The opportunities are nearly endless, so it might be easier to mention what you should not pair this dish with. Something that is equally as starchy as a potato, such as a pasta dish, may not be a good choice for a well-balanced meal.

Making Jacket Potato Stuffed with Minced Beef Sauce
Our minced beef sauce is rich and warm, which pairs well with the comforting potato you’ll get in each bite. Together, beef and potatoes make a timeless combination. Try your hand at our stuffed potato recipe the next time you have guests over!
The Microwave Jacket Potato and Minced Beef Recipe
- Heat up some sunflower oil (or a healthy oil of your choice) in a pan. Add ½ chopped onion and 1 crushed garlic clove to the heated oil and simmer them until they are soft and golden-brown. Then, add 250g of minced beef with salt and pepper and cook until the beef is browned.
- Add 2-5 Tbsp of tomato puree to the cooked beef and stir. Add 1-2 tsp of vinegar and stir. Cook on low heat for about 15 minutes.
- Meanwhile, wash 5 potatoes, add them to a large bowl and microwave for 7-8 minutes (or use the inbuilt microwave setting used to cook potatoes).
- Once the potatoes are cooked slice them through the center, add a pinch of salt, pepper and a knob of butter (optional).
- Once the minced beef sauce is cooked stuff the microwave jacket potatoes with the sauce and top with grated cheese (optional).
