Ingredients
- 250 g of minced beef
- ½ chopped onion
- 1 crushed garlic clove
- 2-5 tablespoon of tomato puree
- 1 teaspoon of vinegar
- 5 potatoes
- Salt to taste
- Pepper to taste
- Hard cheese optional
- A splash of sunflower oil
Instructions
- Heat a splash of sunflower oil in a pan. Add onion and crushed garlic clove to the heated oil and simmer until soft and golden-brown. Then, add minced beef with salt and pepper and cook until the beef is browned.
- Add tomato puree to the cooked beef and stir. Add vinegar and stir. Cook on low heat for about 15 minutes.
- Meanwhile, wash potatoes, add them to a large bowl and microwave for 7-8 minutes (or use the built-in microwave setting used to cook potatoes).
- Once the potatoes are cooked, slice them through the center, add a pinch of salt, pepper and a knob of butter.
- Once the minced beef sauce is cooked, stuff the microwave jacket potatoes with the sauce and top with grated cheese.
