Make this colorful, filling Naked Shrimp Burrito Bowl at home with fresh vegetables and leftovers. This nutrious bowl is a great lunch or dinner option.
Add beans to a medium-sized saucepan. Fill the saucepan with water, 2 cm above the beans. Season with salt, pepper and any other seasoning of your choice. Cook for 25-30 minutes or until soft.
Add rice to a medium-sized saucepan and rinse three times. Fill the saucepan with 2 cups of water, add the rice and a pinch of salt. Bring the water to a boil and cook on medium heat for 12-15 minutes or until fluffy.
Heat a splash of olive oil in a pan. Add the onions, sweet peppers, and a pinch of salt and pepper. Cook on a medium heat for 3-5 minutes.
Next, add a splash of oil to the same pan. Add shrimp, salt, pepper, Cajun seasoning, and garlic seasoning. Sear for 3-5 minutes on both sides on medium heat.
Plate up! Add rice, shirmp, sweet peppers, beans, avocado and yogurt to a bowl and enjoy!
Notes
Leftovers: If you have leftover cooked rice in the fridge then you can reheat it and add it to the bowl instead. The same goes for beans. Reheat leftover beans or canned beans if you are short on time.
Beans: Feel free to use any cooked beans of your choice for this recipe. For example, you can add black beans or pinto beans instead.
Cajun seasoning: Use low-sodium Cajun seasoning to control the salt content in the shrimp.
Shrimp: If you are using frozen shrimp then make sure you allow it to thaw completely before preparing.
