Over the last few years, burritos have become a bit of an obsession at Sims Home Kitchen. We love how versatile they are and experimenting with different fillings.
We are big seafood fans so we decided to created an easy homemade naked prawn burrito bowl. In this recipe we used prawns, mixed bell peppers, avocados, black eye beans and rice. All these ingredients create the perfect balanced bowl and energy boost.
How to Make a Naked Prawn Burrito
- Add beans to a medium sized saucepan. Fill the saucepan with water (2 cm above the beans), season with salt, pepper and any other seasoning of your choice. Cook for 25-30 minutes or until soft.
- Add rice to a medium sized saucepan and rinse three times. Fill the saucepan with 2 cups of water, add the rice and a pinch of salt. Bring the water to a boil and cook on a medium heat for 12-15 minutes (do not stir).
- Heat a splash of olive oil in a pan. Add the onions, sweet peppers, a pinch of salt and pepper. Cook on a medium heat for 3-5 minutes.
- Heat some oil in the same pan. Add prawns, salt, pepper, a pinch of cajun powder and a pinch of garlic seasoning. Sear for 3-5 minutes on a medium heat.
- Plate up! Add rice, prawns, sweet peppers and beans to a bowl. Add avocado and yoghurt as shown.
Top Tips:
- To cut the carbs completely use lettuce instead of rice.
- Use canned beans instead of dry beans to save time.
- Mix up the protein! Swap shrimp for chicken, shredded beef, salmon, veggies and more!
Storage
This bowl can be refrigerated for 2-3 days. It is also suitable for meal prep!
Alternatives
You can also alter the amounts of each ingredient to suit your diet. For example, if you want to build muscle double the quantity of prawns (protein) and half the quantity of rice.

Naked Shrimp Burrito Bowl

Ingredients
- 2 cups of large shrimp cleaned and deveined
- 1 cup of rice or pre-cooked
- 1 cup of black eyed beans or canned or leftovers
- ½ onion sliced
- 3 Capsicum peppers (red, green and yellow) sliced
- 1 avocado diced
- ¼ teaspoon Cajun seasoning
- ¼ teaspoon garlic powder
- Salt to taste
- Pepper to taste
- A splash of Olive oil
- 4 tablespoon Greek yoghurt for serving
Instructions
- Add beans to a medium-sized saucepan. Fill the saucepan with water, 2 cm above the beans. Season with salt, pepper and any other seasoning of your choice. Cook for 25-30 minutes or until soft.
- Add rice to a medium-sized saucepan and rinse three times. Fill the saucepan with 2 cups of water, add the rice and a pinch of salt. Bring the water to a boil and cook on medium heat for 12-15 minutes or until fluffy.
- Heat a splash of olive oil in a pan. Add the onions, sweet peppers, and a pinch of salt and pepper. Cook on a medium heat for 3-5 minutes.
- Next, add a splash of oil to the same pan. Add shrimp, salt, pepper, Cajun seasoning, and garlic seasoning. Sear for 3-5 minutes on both sides on medium heat.
- Plate up! Add rice, shirmp, sweet peppers, beans, avocado and yogurt to a bowl and enjoy!
Notes
- Leftovers: If you have leftover cooked rice in the fridge then you can reheat it and add it to the bowl instead. The same goes for beans. Reheat leftover beans or canned beans if you are short on time.
- Beans: Feel free to use any cooked beans of your choice for this recipe. For example, you can add black beans or pinto beans instead.
- Cajun seasoning: Use low-sodium Cajun seasoning to control the salt content in the shrimp.
- Shrimp: If you are using frozen shrimp then make sure you allow it to thaw completely before preparing.
