Preheat the oven to 350°F/175°C.Start by cleaning the fish. Remove the gill and descale.
Then, slice three diagonal slits across the fish on both sides, then marinate it with salt to taste.
Next, add garlic, ginger, red bell pepper, green bell pepper, scotch bonnet, and onion to a blender and blend until the mixture reaches a medium-thick consistency.
Heat a splash of oil in a pan, then pour the blended mixture into the oil and season with salt, thyme, cayenne pepper, paprika, curry powder, Knorr chicken seasoning and lemon juice. Stir and cook for ten minutes.
Once the sauce is done, remove it from the heat and reserve half for later use, and set aside five tablespoons for serving.
Use half of the remaining sauce to marinate the fish and rub it inside the fish and the slits. Cover and chill the fish and let it marinate in the fridge for 15 minutes.
Once marinated, grill for 15 minutes on one side, then baste the fish with the marinade after flipping on each side until done. Alternatively, roast for 45 minutes in a preheated oven at 350°F, flipping halfway through and basting until done.
Serve this tasty Nigerian grilled fish with the remaining sauce, lemon slices, salad, plantain, and dundun.
Notes
Marinade: For a deeper, richer flavor, marinate the fish for 1–2 hours before grilling. This allows the spices to infuse into the flesh.
Scotch Bonnet: These fiery peppers pack a lot of heat! Remove the seeds for a milder kick, and always handle with care to avoid skin irritation.
