Nigerian Grilled Fish Ingredients

See the recipe card for full information on ingredients and quantities.
- Tilapia: Use fresh fish and make sure you clean and descale the fish before marinating. Add slits to the fish to ensure that the marinade goes into the flesh.
- Garlic and Ginger: For the best flavor, use fresh garlic or ginger. If not available, powdered seasonings are a suitable alternative.
- Red and Green Bell Pepper: Select fresh bell peppers for the best flavors.
- Scotch Bonnet: Add less or more depending on your preferred heat level.
Tips and Substitutions
- Marinade: For a deeper flavor, marinate the fish for 1-2 hours before grilling.
- Scotch Bonnet: It is very hot, so remove seeds if you prefer less heat. Always handle with care to avoid skin irritation.
- Fish Substitutes: You can use catfish or croaker in place of fish with varying tastes and textures. Use the fresh fish for the best results.
- Serving Suggestion: Serve hot with fresh salad or your preferred side dish. Serving with a used marinade spooned over the fish adds extra flavor and restaurant-style presentation.
How to make Nigerian Grilled Fish
Preheat the oven to 350ยฐF/175ยฐC or grill. Descale and clean the fish. Next, slice three diagonal slits across the fish on both sides, then marinate it with salt to taste, optionally adding one Maggi Cube.

Step 1: Add garlic, ginger, red and green bell peppers, scotch bonnet, and onion into a blender.

Step 2: Blend until it's smooth, but it should still have a bit of texture.

Step 3: Heat a splash of oil in a pan.

Step 4: Then pour in your blended mix. Season with salt, thyme, cayenne, paprika, curry powder, Knorr chicken seasoning, and a squeeze of lemon juice. Stir it all up and let it cook for about 10 minutes. Once the sauce is ready, take it off the heat. Set aside half for later, and scoop out about 5 tablespoons for serving.

Step 5: Use the remaining marinade to coat your fish, ensuring it's evenly distributed, especially inside the cuts and cavity. Cover and pop it in the fridge for 15 minutes.

Step 6: Grill the fish for 15 minutes on one side, flip, baste with marinade, and grill the other side until done. Or roast it in a preheated oven at 350ยฐF for 45 minutes, flipping halfway and basting as you go.
Step 7: Serve this tasty Nigerian grilled fish hot with the reserved sauce, plus plantain, dundun, and a fresh salad on the side. You may also enjoy Nigerian Assorted Meat Pepper Soup.
