This Oven-baked Moin Moin is a delicious crowd-pleasing Nigerian side dish. Combine peeled beans, onions, red peppers to make a flavorful dish. Serve with Jollof rice, chicken and coleslaw.
Add peeled beans to a large bowl. Pour in enough water to cover the peeled beans and soak for 2-3 hours (add more water when necessary).
Preheat oven at 190C, grease an ovenproof dish and set aside for later.
Add peeled beans, red bell pepper, onion, scotch bonnet, tomato puree, half a cup of water, salt to taste and maggi to a blender and blend (you may need to do this in two batches). Add the remaining half of the water and blend.
Heat vegetable oil in a pan. Pour moin moin mixture and oil into the the greased dish and stir. Add egg slices and tuna/grilled mackerel pieces to the top of the moin moin (as shown) and bake for 45 minutes.
Notes
To make your moin moin extra moist fill an oven-proof dish with water and add it to the bottom shelf while the moin moin bakes.Batch: Feel free to half, double or triple the ingredients in this recipe to feed more or less people.
