Ingredients

of large shrimp

red bell pepper

one yellow bell pepper

tomatoes

broccoli

aubergine/eggplant

large red onion

garlic cloves
Instructions
Preheat oven at 160C.
Lightly grease an oven dish or tray.
Add red bell peppers, yellow red bell pepper, broccoli, aubergine, red onion, garlic and prawns to the tray. Season with salt, pepper and thyme.
Toss and bake for 15-20 minutes.
Notes
Oven:
Ensure the oven is preheated before cooking to ensure that everything cooks evenly.
Cooking:
Flip the vegetables halfway through when cooking to ensure both sides are cooked.
Batch:
You can half, double, or triple the ingredients in this recipe to feed more or fewer people.
