These Roasted Crispy Potatoes are soft on the inside and crispy on the outside! Serve this glorious side with Christmas dinner, salmon, chicken, beef brisket and more.
First, you will need to peel and wash 1.5kg of potatoes.
Preheat the oven to 190C/395F/Gas5. Then, add them to a medium sized saucepan, add enough cold water to cover the potatoes and add a pinch of salt. Bring potatoes to a boil and cook for 7-8 minutes on a low/medium heat.
Meanwhile, pour 80ml of goose fat into an ovenproof dish. Heat in the oven for 10 minutes.
Once the potatoes are ready drain out the water and shake the potatoes in the saucepan to roughen the edges.
Add the potatoes to the ovenproof dish and smother them in the goose fat. Bake for 40-50 minutes or until done.
Remove the potatoes from the oven, season them with a pinch of sea salt and serve!
