All roast potatoes are not created equal! Sometimes they can be quite hard and tasteless but with a few tips and tricks you can upgrade your roast potatoes.
The secret ingredient used to make the best roast potatoes is GOOSE FAT. Goose fat helps to make the potatoes crispy on the outside and soft on the inside.
Goose fat is a type of fat that is known for it’s high smoking point which makes it a great choice for baking potatoes, and it can be collected in many ways. For example, it can be drained off roasted birds.
Best Potatoes for Roasting
For this recipe, I used King Edward potatoes because they are floury and great for roasting. You can also use kestrels, Maris piper, roosters and any other type of floury potatoes.
How to Make Crispy Roast Potatoes
- First, you will need to peel and wash 1.5 kg of potatoes.
- Preheat the oven to 190C/395F/Gas 5. Then, add them to a medium sized saucepan, add enough cold water to cover the potatoes and add a pinch of salt. Bring potatoes to a boil and cook for 7-8 minutes on a low/medium heat.
- Meanwhile, pour 80 ml of goose fat into an ovenproof dish. Heat in the oven for 10 minutes.
- Once the potatoes are ready drain out the water and shake the potatoes in the saucepan to roughen the edges.
- Add the potatoes to the ovenproof dish and smother them in the goose fat. Bake for 40-50 minutes or until done.
- Remove the potatoes from the oven, season them with a pinch of sea salt and serve!

I love serving this tasty side with roasted chicken and vegetables as it is a classic meal that you really can’t go wrong with!
Roasted potatoes can also be served with Moist Christmas turkey, salmon, Simple Beef Brisket Joint , Christmas roasted vegetables or pork tenderloin.
