The secret ingredient used to make the best roast potatoes is goose fat. Goose fat helps to make the potatoes crispy on the outside and soft on the inside.

- Potatoes: I used King Edward potatoes for this recipe because they are floury and great for roasting.
- Goose fat: Use goose fat, a type of animal fat, for cooking. You can purchase it in most supermarkets. Known for its high smoking point, goose fat is an excellent choice for baking potatoes.
- Salt to taste.
Tips and Substitutions
- Potatoes: You can also use kestrels, Maris piper, roosters, or any other type of floury potato.
- Goose fat: If you do not have goose fat, you can use duck fat or lard.
- Oven: Ensure the oven is preheated so the potatoes can cook properly.

Roasted Crispy Potatoes
Equipment
- 1 Oven tray
Ingredients
- 1.5 kg of King Edward or any other floury potatoes
- 3 tablespoons Sea salt
- 80 ml of goose fat
Instructions
- First, you will need to peel and wash 1.5kg of potatoes.
- Preheat the oven to 190C/395F/Gas5. Then, add them to a medium sized saucepan, add enough cold water to cover the potatoes and add a pinch of salt. Bring potatoes to a boil and cook for 7-8 minutes on a low/medium heat.
- Meanwhile, pour 80ml of goose fat into an ovenproof dish. Heat in the oven for 10 minutes.
- Once the potatoes are ready drain out the water and shake the potatoes in the saucepan to roughen the edges.
- Add the potatoes to the ovenproof dish and smother them in the goose fat. Bake for 40-50 minutes or until done.
- Remove the potatoes from the oven, season them with a pinch of sea salt and serve!
