Sweet potatoes loaded with minced beef is the perfect healthy lunch to keep you going throughout the day! We also added mashed avocados and sour cream!
Heat up some sunflower oil (or a healthy oil of your choice) in a pan. Add ½ chopped onion and 1 crushed garlic clove to the heated oil and cook them until they are soft and golden-brown.
Then, add 250g of minced beef with salt and pepper and cook until the beef is browned. Add 1-2 tablespoon of tomato puree to the cooked beef and stir. Sweeten with a drop of lemon juice, salt to taste, pepper to taste and a pinch of oregano. Cook on low heat for about 10-12 minutes. You can also add any other seasoning of your choice.
Boil 5-7 sweet potatoes for 8-10 minutes or until soft and cooked through. Pat dry and set aside.
Mash one whole avocado and season with salt and pepper (or make your guac however you like it!).
Cut the sweet potatoes in half and stuff them with minced beef sauce. Top with the guac and sour cream, and enjoy!
