How to Make Sweet Potatoes Loaded with Minced Beef
- Heat up some sunflower oil (or a healthy oil of your choice) in a pan. Add ½ chopped onion and 1 crushed garlic clove to the heated oil and cook them until they are soft and golden-brown. Then, add 250g of minced beef with salt and pepper and cook until the beef is browned.
- Add 1-2 tablespoon of tomato puree to the cooked beef and stir. Sweeten with a drop of lemon juice, salt to taste, pepper to taste and a pinch of oregano. Cook on low heat for about 10-12 minutes. You can also add any other seasoning of your choice.
3. Boil 5-7 sweet potatoes until soft and cooked through. Pat dry.
4. Mash one whole avocado and season with salt and pepper (or make your guac however you like it!).
5. Cut the sweet potatoes in half and stuff them with the other ingredients. Top with the guac and sour cream, and enjoy!
