These bakery-style Tiramisu Cookies are a luxurious treat that combines soft, chewy, coffee-flavored cookies and a creamy mascarpone topping dusted with cocoa powder. Best of all, they are ready in 30 minutes and can be served as dessert.
Preheat oven to 175°C/350°F. Start by combining flour, baking powder, baking soda and espresso in a medium sized bowl. Mix well.
Next, add butter to a separate bowl and whisk for a few minutes. Then, add granulated sugar and brown sugar. Whisk for 3-5 minutes.
Add egg and vanilla extract the batter and mix for 2 minutes.
Then, add half of the dry ingredients to the bowl and fold gently. Add the remaining dry ingredients and whisk until incorporated.
Use an ice cream scoop to scoop a portion of the cookie dough and gently roll it into a ball. Place the ball on the lined baking tray. Repeat with the remaining dough, ensuring each ball is spaced at least 1.5 inches apart to prevent the cookies from sticking together as they spread while baking. Bake for 10-12 minutes.
Once done, let the cookies chill completely. In the meantime, make the mascarpone cream topping.
Mascarpone Cream
Add cold mascarpone cheese to a separate bowl and mix for 1 minute to soften.
Then, pour heavy cream into the bowl, icing sugar and vanilla extract, and whisk for 3-5 minutes or until fluffy - option to add the cream to a piping bag to top the cookies or use a spoon.
Once the coffee cookies have chilled, top them with mascarpone cream and dust cocoa powder on top using a strainer.
Serve these decadent tiramisu cookies for dessert.
