Tiramisu Cookies Ingredients
- Unsalted butter: For this recipe, use room-temperature, softened butter. I use unsalted butter, but you can use salted butter instead and omit the salt.
- Granulated Sugar: For sweetness.
- Brown sugar: Adds a caramel-like flavor to the tiramisu cookies and compliments the espresso perfectly.
- All-purpose flour: Sift the flour to achieve a smooth cookie dough batter and remove dirt.
- Espresso powder: Use good-quality espresso for the best coffee flavor.
- Baking powder and baking soda: Leavening agents help the cookies rise. Ensure that they have not expired.
- Salt: To balance out the sweetness in the tiramisu cookies.
Mascarpone Cream
- Mascarpone cheese: Select full-fat mascarpone to ensure the topping is rich and creamy.
- Heavy Cream: Use full-fat or whipping cream for a fluffy topping.
- Icing sugar: Sift the icing sugar to remove lumps and dirt. This will ensure that the topping is smooth.
- Cocoa powder for dusting: Select good-quality cocoa powder for the best flavor.
Tips and Substitutions
- Kitchen scale: To make tiramisu cookies, use a weighing scale to weigh all the ingredients correctly. This will ensure that the cookies have the correct texture and the cream has the proper consistency.
- Over-mixing: Do not over-mix the cookie dough, as this will result in hard, chewy cookies. Mix it until the ingredients are incorporated to avoid this.
- Cookie scoot: As soon as the cookies are done, place a cookie cutter on top and move it around in a circular motion to give the cookies a circular shape.
- Cooled cookies: To avoid melting, cool them completely before topping them with the mascarpone cream.
- Topping: You can also top these tiramisu cookies with cream cheese frosting, easy coffee buttercream, vanilla buttercream, milk chocolate ganache frosting, or whipped cream.
How to Make Tiramisu Cookies
- Preheat your oven to 175°C/350°F. In a medium-sized bowl, mix the flour, baking powder, baking soda, and espresso. Set aside. In a separate bowl, whisk the butter for a few minutes.
- Then, add the granulated and brown sugar and whisk for another 3-5 minutes.
- Next, add the egg and vanilla extract.
- Whisk for 2 minutes.
- Add half the dry ingredients to the bowl and fold them gently.
- Then, whisk the rest of the dry ingredients until everything's well combined.
- Grab an ice cream scoop to portion out the cookie dough and roll it into a ball. Place each ball on a lined baking tray.
- Repeat with the rest of the dough, spacing each ball 1.5 inches apart so the cookies don't stick together as they bake. Meanwhile, you can get started on the mascarpone cream topping.
- Add cold mascarpone cheese to a bowl and mix it for a minute to soften it.
- Pour in the heavy cream.
- Then, add icing sugar and vanilla extract.
- Whisk for 3-5 minutes until fluffy and set aside.
