This Vegan Sweet Potato and Red Pepper Sandwich is a perfect lunch option. It includes sweet potato, red capsicum peppers, cabbage, kale, and cucumber.
Grab a small bowl and add the cooked sweet potato (peeled). Season with a pinch of salt and pepper to taste and use a fork to mash it until smooth.
Heat a splash of olive oil in a pan. Then pan fry kale and season with salt and pepper to taste. Repeat this step for the red bell peppers and leave to cool
Grab a slice of bread and add all of the ingredients to the bread as shown!
