How To Make Vegan Sweet Potato and Red Pepper Sandwich
- Grab a small bowl and add the cooked sweet potato (peeled). Season with a pinch of salt and pepper to taste and use a fork to mash it until smooth.
- Heat a splash of olive oil in a pan. Then pan fry kale and season with salt and pepper to taste. Repeat this step for the red bell peppers and leave to cool
- Grab a slice of bread and add all of the ingredients to the bread as shown!
Storage
This sandwich can be refrigerated for up to 24 hours. It is also a great meal prep option.

- 1/4 red bell pepper chopped (option to pan fry)
- 1/4 cucumber chopped
- A handful of kale precooked
- 4 slices of bread
