Add chunks of white chocolate to a medium-sized bowl. Then, pour in heavy cream and pistachio paste.
Next, heat the ingredients in a microwave for 30 seconds and stir. Repeat this step until the chocolate is fully melted.
Stir until the ganache is smooth and evenly combined. At this point you can leave the ganache to cool and use it as desired or follow the rest of the recipe for a firmer whipped pistachio ganache.
Cover the pistachio ganahce with cling film and make sure it is touching the ganache to prevent air bubbles. Then, refrigerate for 2 hours and whisk for a couple of minutes

Notes
White chocolate: Make sure you use good quality chocolate for the best results. Your ganache will look and taste better with quality chocolate. You can also use white chocolate chips instead.
Microwave: Do not heat up your chocolate and cream for more than 30 seconds in the microwave as this may result in burnt chocolate.
Stir: Make sure you stir the mixture in between heating. This will prevent the mixture from getting stuck together.
Pistachio - Use good-quality pistachio paste or puree for the best flavor. You can also add a drop of green food coloring if you want to intensify the color.
