Pistachios are one of my favorite nuts because they taste absolutely delicious when they are added to desserts. They can be crushed to add some crunch or made into a puree or paste.
This pistachio ganache recipe includes white chocolate and heavy cream to make a smooth, silky, nutty ganache. It tastes so good that I have to stop myself from finishing it before I use it for my desserts!

This delicious pistachio white chocolate ganache can be made by following a few simple steps. All you need is one bowl and a microwave. Which also means less washing up!
Another thing I love about pistachio ganache is that it can be used for so many different desserts. For example, this pistachio filling could be used to fill macrons. It is also a great alternative to pistachio icing as it does not include butter or sugar.
If you don't have any pistachios to hand, try this chocolate ganache, white chocolate ganache or lemon ganache instead.
Ingredients

- Pistachio paste or puree - You can buy ready-made pistachio paste or puree from the supermarket or online. Alternatively, you can make pistachio paste from scratch. This involves blending raw pistachios until it forms a paste but I prefer to buy ready-made paste as it saves time.
- White chocolate - Use good-quality white chocolates for the ganache as it will affect the taste and texture.
- Heavy cream - Use full-fat heavy cream for the best results.
- Pistachio or almond extract (optional) - If you want an extra nutty flavor then add a few drops of pistachio or almond extract to the ganache.

How to Make Pistachio Ganache
1. Start by adding chunks of white chocolate to a medium-sized bowl. If you are using a chocolate bar, chop it into chunks, which will help the chocolate to melt faster. Then, pour in heavy cream and pistachio paste.
2. Next, heat the ingredients in a microwave for 30 seconds and stir.
3. Repeat this step until the chocolate is fully melted and mix until the ganache is smooth and evenly combined. At this point, you can leave the ganache to cool and use it as desired or follow the rest of the recipe for a firmer whipped pistachio ganache.
4. Cover the pistachio ganache with cling film and make sure it is touching the ganache to prevent air bubbles. Then, refrigerate for 2 hours.
5. Whisk for a couple of minutes and get ready to add this mouth-watering Whipped Pistachio Ganache to your favorite desserts!

- White chocolate: Make sure you use good quality chocolate for the best results. Your ganache will look and taste better with quality chocolate. You can also use white chocolate chips instead.
- Microwave: Do not heat up your chocolate and cream for more than 30 seconds in the microwave as this may result in burnt chocolate.
- Stir: Make sure you stir the mixture in between heating. This will prevent the mixture from getting stuck together.
- Pistachio - Use good-quality pistachio paste or puree for the best flavor. You can also add a drop of green food coloring if you want to intensify the color.

Yes. When the whipped ganache is left at room temperature or refrigerated, then it will eventually harden. For this reason, it is essential to work quite quickly when you are using ganache.
