Have you ever wondered what to do with leftover turkey? Well here is a simple and quick leftover grilled turkey sandwich recipe for you to enjoy!
What type of bread should I use?
I used white bread for this recipe because I think it holds together well and tastes delicious. You can use wholemeal bread if you would like a healthier alternative or leftover dinner rolls.
What kind of cheese should I use?
I used cheddar cheese but you can also use brie cheese or mozzarella cheese.
How to Make a Leftover Grilled Turkey Sandwich
You will need bread, cheese, leftover turkey, spinach and cranberry sauce.
- First, you will need two slices of white bread. Spread butter on one side of bread and mayonnaise on the other.
- Heat a pan and add one slice of bread butter side down. Then, add cheese, leftover turkey, cranberry sauce, mashed potatoes, gravy and spinach. Add the second slice of bread butter side up and cook for 2-3 minutes.
- Flip the sandwich and cook for another 2-3 minutes on the other side. Slice in half and enjoy! 🙂
NB: If you are using turkey from the fridge or freezer it would be a good idea to heat it in the microwave before adding it to the sandwich. The turkey should be lukewarm or room temperature before adding it to the sandwich.
What Piece of Turkey Should I Use?
For this recipe, I prefer to use leftover turkey breast pieces. However, feel free to use any piece of your choice. You can also use turkey slices in this recipe.
- Spinach – most greens will work in this sandwich. Another great alternative is lettuce.
- Cranberry – use shop bought cranberry sauce or homemade cranberry sauce in this recipe.
- Butter – I used salted butter in this recipe to make the outside of the bread golden. You can also use unsalted butter. Spread butter in the bread or cream cheese
Alternatives
This sandwich is extremely versatile you can add leftover roasted vegetables, stuffing, avocado, sunny side up eggs or bacon!

This sandwich can be refrigerated for up to 24 hours in cling film or an air-tight container. It is also a great meal prep or lunch option.
