Our chicken fajitas recipe might look overwhelming at first glance because of all the ingredients we use, but we promise it’s super easy! In fact, it only takes 5 minutes to prep and 20 minutes to cook. It is a hassle-free meal that has lots of healthy and delicious ingredients for everyone to enjoy.
Probably the most time-consuming part of this recipe is chopping up the vegetables and the chicken fillets. But after spending a few dedicated minutes on some prep-work, the rest is super easy. We like listening to our favourite music while chopping ingredients, and after a few songs, the fajitas are already almost done!
This is a great meal prep idea that you can make in under 30 minutes. It is virtually carb-free and full of antioxidants to help you cleanse after a rough week.
How to Make Quick and Healthy Chicken Fajitas
- First, make the chicken recipe. Add 4 chicken fillets to a bowl and season them with salt and pepper to taste, cumin, paprika, garlic powder and lemon juice. In a frying pan, heat up some sunflower oil and cook fillets on each side for 7-9 minutes or until fully cooked. Set aside.
- Then, make the mixed pepper portion of the recipe. You’ll want to chop 1 red bell pepper, 1 yellow bell pepper, 1 green bell pepper, and 1 onion.
- Then, heat up some olive oil in a second frying pan. Add the onions and peppers, then season with salt and pepper to taste. We also recommend adding paprika to taste. Fry until the vegetables are soft and slightly roasted.
- Cut up your chicken fillets into bite-sized pieces. Add them to the peppers and mix. Then, add 1-2 chopped avocados, 1 tablespoon of Greek yoghurt or sour cream, and some cilantro on top.
- Serve with warm tortillas and enjoy!
