This vanilla kiwi breakfast smoothie is the perfect way to start your day! We made it in a mason jar so you can eat it on the go as well!

With a few simple ingredients, you can recreate this delicious healthy vegan breakfast jar! My favorite thing about this recipe is that you can eat on the go if you're in a rush.
How to Make Vanilla Kiwi Breakfast Smoothie
- Add ½ cup of oats to a large bowl. Pour in enough boiling water to cover the oats. Soak for 30 minutes and leave to cool.
- Add oats, 1-2 prunes, 4-6 tablespoon of soya milk, 1-2 tablespoon of maple syrup and 1-2 teaspoon of vanilla extract to a blender (or food processor). Blend until smooth.
- Slice kiwi (two thin slices). Press firmly inside of a dry jar. Pour in the smoothie and add remaining kiwi chunks to the top.
How to Store the Vanilla Kiwi Breakfast Smoothie
This smoothie is best eaten on the day.
Alternatives
If you want more of a stronger kiwi flavor then add ½ of the kiwi to the blender and blitz.
Feel free to alter this smoothie to your taste. Add more maple syrup for a sweeter smoothie and more soya milk for a milkier smoothie.
For an even healthier recipe add pitted dates instead of maple syrup.

- ½ cup oats
- Boiling hot water
- 1 kiwi
- 1-2 prunes
- 1-2 tablespoon maple syrup
- 1-2 teaspoon of vanilla extract
- 4-6 tablespoon of soya milk

- Add oats, prunes, soya milk, honey and vanilla extract to a blender (or food processor). Blend until smooth.
- Slice kiwi (two thin slices). Press firmly inside of a dry jar. Pour in the smoothie and add remaining kiwi chunks to the top.
Notes
- Kiwi: For a stronger kiwi flavor, add ½ of the kiwi to the blender and blitz.
- Taste: Adjust to suit your taste. Add more maple syrup for a sweeter smoothie and more soya milk for a milkier smoothie.
- Dates: For an even healthier recipe, use pitted dates as a sweetener instead of maple syrup.
