This vegetarian black bean veggie bowl has all the goodies! Add sweetcorn, tomatoes, bulgur wheat, boiled eggs, red onions and a sprinkle of feta.

How To Make Vegetarian Black Bean Veggie Bowl
- Add 1/2 a cup of bulgur wheat and 1 cup of water to a saucepan. Add a pinch of salt, bring to a boil and cook for 10-15 minutes (or follow the instructions on the packaging).
- Cook 1/2 a cup of sweetcorn (follow instructions on packaging) and boil 2 eggs for 8-12 minutes. Then, chop 1 tomato, 1/4 red onion, a few lettuce leaves and set aside.
- Add lettuce leaves, bulgur wheat, black beans, boiled eggs, red onions, tomatoes, lime wedges and feta to a bowl as shown.
Alternatives
Optional: I added a precooked black bean chili to this bowl. To make this add 1/2 a scotch bonnet, 1 red bell pepper, 1 can of tomatoes and to a blender and blend until smooth.
Then, heat a splash of vegetable oil in a saucepan and add 1 thinly chopped onion and cook for a few minutes. Season with 1-2 tbsp of curry powder, 1-2 tbsp of cumin powder, a pinch of oregano, cayenne pepper to taste, stir and cook on a medium heat for 1 minute.
Pour in blended tomato mix and bring to a boil. Then, add 650g of black beans, stir occasionally and season with salt to taste (adjust seasoning if necessary). Leave to cook on a low/medium heat for 30 minutes or until soft. This chilli serves 5+.
Feel free to add all of your favorite veggies to this bowl e.g aubergine, spinach, red cabbage etc.
